After a rural Cambridgeshire upbringing in a family with a tradition of growing and cooking fresh food, Chris started his career at the Three Horseshoes in Madingley, where he developed a passion for creating beautiful plates from the finest local ingredients. He continued his training at Bibendum in London under Head Chef Matthew Harris, learning to create impeccable classic French and British cuisine, then helped his friend and mentor Jamie Younger establish The Palmerston in Dulwich. His first Head Chef role followed at the Old Bridge hotel in Huntingdon, where owner John Hoskins, a Master of Wine, taught him the importance of wine with food. It was there he met Sarah, then working as Reception Manager.
